Truly the pearl of the Tsars, the TSARSKAYA oyster forms the core of Russians’ love for the oysters of Cancale.
In ancient times, these oysters were delivered directly to Roman emperors for their famous banquets. Since then, the oysters of Cancale have held a prominent position on the tables of Henry IV, Francis I, Louis XIV, Marie Antoinette, Robespierre, Desmoulins, and Signac. But the most passionate devotees of these oysters were the Russian Tsars. Over a century ago, the oysters came to Saint Petersburg and were served at the tables of the Tsars along with caviar or, preferably, vodka.
So named in memory of the Tsars, the Tsarskaya is produced exclusively in Cancale by the Parcs Saint Kerber. Just as in the enchanting days of the past, the oysters are strong and fully fleshed, ripened in the bay of Mont St. Michel.
It is this ripeness which gives them their unique, subtle, iodine flavour with a slight sweet tint that still caresses connoisseurs’ tongues today. The delicacy of the flesh with its subtle scent and aromatic bouquet renders it the King of great taste sensations.
