OYSRI – Salty & Rough!
The name OYSRI is derived from the Celtic word for oysters , ‘oisrÏ’. They are farmed by Dungarvan Shellfish in the south of Ireland, Dungarvan Bay. Dungarvan Shellfish is a family business that has that has dealt with oyster cultivation all their lives. The bay they’re using has been used for growing oysters since 1985. The fact that it’s so secluded makes it perfect for aquaculture. The cultivation sites are located on the sand flats to the east of Cunnigar spit, where the OYSRI are grown in bags on trestles in the intertidal zone. The oysterseeds are 1mm at the start of the process, and are grown into a consumer-ready product in about 3 to 4 years. Years of experience and know-how are applied to ensure a premium, top of the line oyster .
