Beef Top Blade steak, grain-fed, USA *fresh

The beef Top Blade Steak (known also as Blade Steak or Flat Iron Steak) comes from the flavorful chuck section (shoulder). It is an all-purpose steak. While it is very tender and richly flavored, a line of gristle that runs through the center of the meat makes it a poor option for serving whole. Cook it slowly with moist heat (braising). Or another great option is to slice for grilling, broiling or stir-fry.
