Beef tenderloin is widely regarded as the most tender cut of beef, and it’s certainly the most expensive. It’s a portion of the ever-popular T-bone or porterhouse steak, and the upscale filet mignon comes from it as well.
Tenderloin can be cooked whole or cut in three parts:
The butt end is usually suitable for carpaccio.
The center-cut is suitable for equal size steaks (fillet mignon) as the diameter of the eye remains relatively consistent.
The tail: is suitable for steak in one piece or more common is to slice the meat into finger sized slices for a quick sauté or stir fry.

Angus beef develops with better marbling than most cattle. Most people agree that marbling improves flavor, tenderness, and keeps meat moist while cooking, especially at high temperatures. Beef is graded based on marbling, with the highest degree of marbling reserved for the Prime grade.
- USDA Prime Beef is produced from young, well fed beef cattle. It has slightly abundant and abundant marbling and it is generally used in top class hotels and restaurants. *Only around 5% of all USDA beef is graded as Prime.
- USDA Choice Beef is high quality, but has less marbling than Prime. Roasts & steaks will be very tender, juicy, and flavourful, suited for broiling, roasting or grilling. *Around 70% of all USDA beef is graded as Choice.
